Shatar sets are some of the coolest figural sets one can find.  They are often carved as heirlooms to be passed down in a family.  

There are some regional variations in style, as well as the fact that each family often made their own.  However generally the pieces are depicted in a similar manner.  I have however fun into a distinct set from an ethnically Mongolian area northern China in which the pieces are turned instead of carved for the most part.  They are though used for Shatar from what I have read about them (last two photos).
